Role:
To assist the Food Services Manager in overseeing and managing the Food Services Department of the School. The role will be directly responsible for Food Service Operations in the following areas: Ganga Kitchen operations, indents, food production, service, clearance, menu planning, food cost management, accounts, budgets, hygiene and food safety, maintenance, and other assigned duties.

Qualifications & Experiences
Required Qualifications:
- Diploma or degree in the field
- An advanced degree - Masters Proficient with oral and written English
- Proficiency in communication in English and Tamil
- Computer literate
Required Experience:
- Able to communicate clearly and effectively in a pleasant manner
- Should have a clear and pleasant telephone voice and manner
- Proven Experience in an IB school setting
- At least 7 years in a supervisory role in Food Services
Required Skills and Dispositions:
- Possess strong communication and interpersonal skills with persons from a variety of backgrounds and nationalities
- Possess strong time management and organizational skills
- Proven ability to be a team player.
Reports to: Director - Campus Operations and Infrastructure
Coordinates with: Food Service Manager/ all departments
Time Period: Initial 2-year contract, potential extensions after initial contract
Responsibilities
Instruction
A KIS staff is expected to provide quality instruction for the students at KIS in accordance with the school’s established curriculum, school policies and expectations. The person in this role:

GANGA CAMPUS
OPERATIONS
- Ordering – Placing of orders to the purchase officer in keeping with par stock levels. Surveying new market trends and directing the store keeper to new suppliers for better budget utilisation.
- Orders for out of the ordinary items for trips, functions, parties, guests, and any orders placed at Ganga Campus to be communicated to the store keeper / controller for procurement.
- Ordering on a daily basis the following items directly from the suppliers
- Vegetables
- Fruit
- Giving monthly requirements to the Food Service Manager a month in advance for the following items :-
- Fruit
- Seafood
- Frozen meat (One month lead time to be given for orders to be executed)
Indents
- Raising of indents 36 hrs before it is needed so that the store can process it in time. This to be done electronically.
- Manufacture – Processing of raw food in relation to the menu. Overseeing the maximization of yield. Keeping in mind HACCP holding temperatures. To see that the kitchen cooks meet deadlines.
- Service – Ensuring that food is served at appropriate temperatures and on time. HACCP procedures to be enforced.
- Clearance – Proper clearance of food and their disposal. Records of left over’s for all meals to be kept for Food Cost Purposes. Proper disposal of kitchen waste.
- Menu – Planning menus keeping in line with menu engineering principles, Planning of menus with nutritional and aesthetic balance. Incorporating new items on the menu and monitoring the likes and dislikes of students/staff
- Food Cost – keeping within given budget. Striving to find ways of maximization of food items.
- Accounts
- To keep accounts for the following areas:-
- Gymkhana Sales (Please see section on Gymkhana for details)
- costing of events at Ganga Campus
- Costing of Orders for Ganga Campus
- Budgets – will be responsible for forecasting budgets for the subsequent year. Forecasting and giving Justification of amounts requested for. (rational) ,
- Monitoring of expenses pertaining to Food / Fuel / Equipment
- Hygiene and Food Safety
- Ensuring that HACCP control points (Critical Hazard points) are identified and monitored.
- Cleaning of kitchen on a regular cycle to ensure that the breading of pests is controlled.
- Maintenance
- Ordering – Ordering of new equipment as per the need with modernization in mind and condemning old equipment with the endorsement of the Food Services Manager.
- Maintenance – Maintenance of equipment and seeing that machinery runs with optimum efficiency. Electrical equipments are grounded properly and safety switches are in working order.
- LPG
- Ensuring safety of LPG fixtures and ensuring that safety standards are met.
- Making sure sand buckets / fire extinguishers / pig tails / rubber gaskets are changed regularly, burners are cleaned periodically (Once in three months). Regulators are working properly and gas bunk is up to regulations
- Training
- Training of kitchen personnel in the importance of hygiene and safety to be done on a regular basis.
- Staffing
- Supervision of daily routines in the Kitchen, Dining hall and allied areas. Making rotas and delegation of work to the respective cooks in the kitchen
- Granting of Leave, maintaining of leave register. Reporting disciplinary cases to the Food Service Manager for action.
- Inventories
- Maintaining of inventories for maintaining inventories of flatware, glassware, table cloths, chaffing dishes, hollowware, service-related items.
- Safety & Security
- Ensuring that the operations in the Ganga Campus take place under safe conditions.
- Placing in measurable controls to minimise pilferage and damage or loss to school property and stock.
- GYMKHANA
- Ordering items required
- Monitoring sales on a daily basis and maintaining the sales register.
- Giving monthly statement to Food Services Manager having Indent values, Sales Values, opening stock and closing stock.
MAIN CAMPUS
- Orders
- For all hikes, camps, packed meals :-
- Indents
- Execution of preparation of food items
- Costing of the various orders given above
- Giving the costing to the Food Service Manager for Invoicing
- Maintenance
- Overseeing the maintenance of machinery / electrical / and wood work.
- Raising maintenance requests, ordering of new machinery with the endorsement of the Food Service Manager
- Maintaining and updating inventories.
- F&B Service
- Overseeing the service in the following areas
- Daily (whenever He is present here)
- At school functions and parties irrespective of the location of the event.
- Maintaining inventories of flatware, glassware, table cloths, chaffing dishes, hollowware, and service related items.
- Ordering
- Ordering of the following items on a daily basis for the main campus:-
- Vegetables
- Milk
- GYMKHANA
- Ordering of items needed. Raising indents, supervision of the daily operations.
- Maintaining machinery & equipment registers.
- Monitoring sales and returns of Bread on a daily basis.
- Maintaining of accounts and submitting of accounts to the Food Service Manager on a monthly basis – opening stock, closing stock, indent value and sales figures.
- Seeing to it that the Gymkhana is smoothly and efficiently run.
- Checking the hygiene standards on a weekly basis.
- He will be responsible for the Food Services Operations at Ganga Campus and for the School’s Gymkhana reporting directly to the Food Service Manager for all matters relating to the Food Service Department.
